Raspberry Shortcake Recipe

These shortcakes will serve 4 or 6 people

List Of Ingredients For Raspberry Shortcake

300g of plain flour with extra for dusting
Half a teaspoon of salt
2 teaspoons of baking powder
45g of caster sugar
Extra caster sugar for dredging
1 teaspoon of finely chopped rosemary or thyme leaves
300mls of double cream
1 teaspoon of whole lavender flowers
4 tablespoons of milk with extra for brushing
Whipped cream and fresh raspberries to serve

Pre heat the oven to gas mark 6 or 200 C.

In a bowl mix together the dry ingredients with the herbs.

Add the cream and a small amount of milk so that a stiff dough is formed.

Lightly flour a working surface and tip out the bowl contents.

Roll or pat the ingredients into a 2.5cm shape.

Cut into 8cm circles.

Place on a lightly floured baking tray. Brush the tops with the extra milk and then dust with the extra sugar.

Bake for about 10 minutes. The shortcakes should appear golden brown and have risen in height.

Remove from the oven and set aside to cool.

Split open the shortcakes and fill with the whipped cream and raspberries.
