Ingredients For Thai Green Chicken Curry


4 boned, skinned and diced chicken breasts
300mls of chicken stock
300mls of coconut milk - do try and get reduced fat coconut milk
2 sliced red onions
125g of shredded spinach
3 chopped garlic cloves
1 small chopped red chilli
2 tablespoons of chopped basil
1 tablespoon of ground coriander
Half a teaspoon of ground turmeric
One quarter of fenugreek seeds or ground fenugreek
Seeds from 4 cardamom pods
Rice


Optional Ingredients

4 kaffir lime leaves
Salt and pepper

How To Make Thai Green Chicken Curry


Heat a large frying pan or wok and dry fry the sliced onion and chopped garlic. They are ready when they become light brown coloured and soft.

Add the diced chicken and cook to seal the meat. It should change to a cooked colour. Season with the salt and pepper if desired.

Add the herbs and spices of turmeric, coriander, chilli, kaffir leaves (if used), cardamom seeds and fenugreek. Stir thoroughly.

Stir in the chicken stock and then the coconut milk and then the chopped basil. Stir well.

Turn down the heat to a minimum setting and gently simmer for about twenty minutes with the lid off so that the chicken absorbs the liquid and the Thai green chicken curry thickens.

The Thai green chicken curry sauce should now start to form and appear thick.

Stir in the spinach.

Serve the Thai green chicken curry with boiled rice.
