Sweet Potato And Squash Soup Recipe
This soup is lovely and creamy and will serve six people.
List of Ingredients
One large onion which has been finely chopped
One large sweet potato which can been peeled and cut into chunks
600g of pumpkin or butternut squash peeled and cut into chunks
1.5 litres of hot vegetable stock
50g of butter
200g crème fraiche
One tablespoon of ground coriander
Fresh chives for the garnish
Salt and freshly ground pepper

Heat the butter in a large saucepan and once melted add the chopped onion and gently fry for about 10 minutes or
until tender and soft.
Add the ground coriander and fry for one minute.
Add the chunks of squash and sweet potato and the hot vegetable stock. If desired add the salt and freshly
ground pepper.
Bring to the boil and then gently simmer for 25 minutes or until the chunks of squash and sweet potato are tender.
Allow to slightly cool then add to a food processor to smooth out the mixture.
Pour into a new saucepan.
Stir in the crème fraiche.
Garnish with the fresh chives and serve.
