List Of Ingredients For Raspberry Sherry Trifle

70g of raspberry jam
300g of fresh raspberries
2 zests of oranges
25g of toasted flaked almonds
400mls of fresh cream
150mls of sherry
40g of fruit sugar
600mls of milk
1 split vanilla pod
225g plain sponge cake which has been sliced
6 egg yolks

Pour the sherry over the cake slices.

Sprinkle on the raspberries and set the bowl aside.

Bring the milk with the vanilla pod to the boil.

In a separate bowl mix the fruit sugar with the egg yolks. Add the boiled milk solution. Return to the pan.

Reheat and stir until it starts to coat the back of a wooden spoon. Remove from the heat.

Sieve the mixture.

Add the orange zest and leave aside to cool down.

Once cooled pour the mixture over the sponge and raspberries.

Whip the double cream. Pipe it over the top, or spread evenly and then spike with a fork.

Leave the dish in the fridge overnight.

Sprinkle with the toasted almond flakes and serve.
