Shellfish and Rocket Pizza Recipe


This is an easy to make pizza, that should serve 4 adults, which can be even easier to make by buying a ready made pizza base.



Ingredients


450g of assorted seafood
Large handful of rocket leaves
Pizza dough for the base, or a ready made pizza base
1 tablespoon of olive oil
Olive oil for greasing and drizzling
300g of tomato passata
1 clove of garlic which has been crushed
1 teaspoon of sugar
The juice of one lemon
Half a teaspoon of chilli flakes
Salt and black pepper

Pre heat an oven to 220 C or gas mark 7


If making your own pizza base then lightly knead it, roll it and form a round 1cm thick base. Place it on the baking tray and push up the edges of the dough base to form a shallow rim.



Cooking Instructions


Heat the olive oil in a large frying pan and fry the garlic for one minute.


Add the sugar and tomato passata and simmer until it is thickened, usually 7 minutes.


Stir in the lemon juice, the chilli flakes and the salt and black pepper.


Remove this mixture from the heat and place to one side.


Spoon the mixture over the dough, spreading it evenly onto the flat surface.


Now add the seafood cocktail.


Season again with the salt and black pepper if desired.


Drizzle a small amount of olive oil over the pizza.


On the top shelf of the pre heated oven bake for about 10 minutes and remove when the pizza looks crispy and golden coloured.


Spread the rocket leaves over the pizza and serve.
