How To Make Easy Pumpkin Soup Recipe

Pumpkin soup is a delicious warming meal during the winter months and popular to eat on Thanksgiving and Halloween.
Do look for a quality pumpkin, rather than the larger pumpkins which are grown for those looking
to carve a Jack Lantern. It is better to look for a smaller pumpkin such as those farmed or grown for pie fillings. These will be less stringy and give a richer
tasting soup. A pumpkin that has a few centimetres of stem left on will last longer and taste fresher. The skin of the pumpkin should be a rich orange colour, free
of blemishes and not easily scratched by a fingernail.
Ingredients For Pumpkin Soup
450g of pumpkin that has been peeled and roughly diced
250g of carrots that have been peeled and roughly chopped
Two onions that have been peeled and roughly chopped
1.5 litres of vegetable stock
50g of butter
1 tablespoon of garam masala
1 teaspoon of mild curry powder
Salt and pepper to season

Making Pumpkin Soup
Melt the butter in a large pan and then add the vegetables with the pumpkin. Gently fry until they brown.
Add the mild curry powder and stir for two minutes.
Add the stock.
Bring to the boil and then reduce the heat.
Simmer until the vegetables are soft.
Now blend the soup until it is smooth and then add the garam masala and the seasoning depending n your taste.
Serve with your favourite heated and buttered bread rolls.
