Panforte Recipe
Ingredients For Panforte
3 egg whites
350g of dark chocolate
100g of roughly chopped walnuts
200g of grated ground almonds
30g of fried or candied orange peel
370g of icing sugar
2 tablespoons of water
How To Make Panforte
Melt 250g of the chocolate by placing in a glass bowl over bowled water.
Beat the egg whites with a fork in a separate large bowl for about two minutes.

Add 300g of the icing sugar, then the peel, almonds and the walnuts and mix.
Very gently mix in the melted chocolate.
Line with cling film a tin or shallow dish that is about 16cm by 3cm. Pour in the mixture then put in the fridge
for about two hours to set.
Melt the rest of the chocolate.
In a saucepan heat the rest of the icing sugar and the water until it becomes syrupy. Add the melted chocolate and
mix together.
Take the tin/dish from the fridge, place it upside down over a large plate and peel off the cling film
Spread the chocolate syrup mixture over the cake and chill until the topping sets.
Slice up.
