4 mangoes which have been peeled and sliced
225g of frozen puff pastry which has been defrosted
60g of unsalted butter
150g of caster sugar

Preheat the oven to gas mark 6 or 220C or 400F.
Melt the butter on a medium heat in a large frying pan that can be placed in a hot oven.
Add the sugar and melt slowly without stirring. Instead tip the frying pan from side to side.
Add the mango slices once the sugar has turned golden. Turn the heat up.
Cook for about 15 minutes until the mango juice has evaporated. Stir frequently. The sauce will thicken
and turn caramelly. Remove from the heat.
Roll out the pastry so that there is enough to cover the mangoes. Pack down the mango solution. Cover with
pastry and push down. Make a hole in the centre of the mango tart.
Bake in the centre of the pre-heated oven for about 25 minutes.
Remove from the oven and leave for a few minutes before turning out onto a plate.
