Lentil Rice Spinach Recipe


Easy to cook recipe using brown basmati rice, lentils, an onion, raisins and spinach. Takes about 30 minutes to prepare and make and will feed four people:


Ingredients for Rice Pilaf with Lentils and Spinach


175g of brown basmati rice
100g green lentils
1 large finely chopped onion
1 large crushed clove of garlic
250g of baby spinach
750mls of vegetable stock
50g of raisins
Sunflower oil
1 cinnamon stick
1 teaspoon of cumin seeds
1 teaspoon of grated fresh ginger root


How To Make Rice Pilaf with Lentils and Spinach


Rinse the lentils and rice.

Spray or coat a small amount of the sunflower oil onto a large and wide frying pan. Fry the chopped onion for about five minutes until soft.

Add some more oil and fry with garlic, ginger and cumin seeds. Stir fry for about two minutes.

Add the rice, lentils and cinnamon stick. Stir thoroughly and add the vegetable stock.

Bring to the boil and cook at high heat for about ten minutes. Cover with a lid and reduce the heat.

Simmer for about 25 minutes or until the stock liquid has absorbed and the lentils and rice are tender.

Remove the cinnamon stick. Add the raisins and spinach and then stir and cook for another two minutes until the spinach leaves have wilted.

Serve with your favourite bread.
