Indian Chicken Recipe

Ingredients For Indian Chicken


750g of chicken fillets that have been skinned and cut into chunks
400g can of chopped tomatoes
3 garlic cloves chopped up or pressed
1 onion which has been chopped
2 tablespoons of vegetable oil
6 whole cloves
The seeds of 3 cardamom pods
1 cinnamon stick
2 teaspoons of root ginger which has been grated
A quarter of a teaspoon of dried red chilli flakes
1 dried bay leaf which has been crumbled
25g of butter which has been diced
150mls of water
1 teaspoon of salt
Coriander leaves to garnish

Step By Step Instructions To Cook Indian Chicken


Put the onion, ginger and the garlic along with one tablespoon of water in a food processor and blend to form a smooth paste.

Grind the spices and the bay leaf until a fine powder is formed.

Heat the oil in a casserole dish, wok or large frying pan.

Add the paste and the spice mix. Stir fry for about 5 minutes on a gentle heat until it appears golden brown.

Add the tomatoes, the water and salt and bring to the boil.

Turn down the heat and simmer for about half an hour with the lid on.

Remove the lid and add the chicken and cook for a further 10 minutes.

Remove from the heat and spread the diced butter around the dish.

Put the lid back on and leave to stand for 5 minutes.

Stir well and then garnish with the coriander leaves.

Serve with naan bread and rice of your choice.
