Feta Cheese, Courgette And Mint Salad BBQ Recipe
This summer salad will feed 4 people.
Ingredients
6 large courgettes
150g of feta cheese which has been crumbled
A handful of fresh mint leaves
3 tablespoons of extra virgin oil
1 tablespoon of sesame seeds
Sea Salt and freshly ground black pepper

1 small crushed garlic clove
1 tablespoon of freshly squeezed lemon juice
4 tablespoons of extra virgin olive oil

How To Make
In a dry frying pan place the sesame seeds and toast them over a medium heat until they are aromatic and golden.
Remove from the heat and allow to cool down.
Pre heat the barbecue.
Cut the courgettes diagonally into thick slices, toss with olive oil and then season with the sea salt and
freshly ground black pepper.
Cook for 2 - 3 minutes on each side until they appear charred and are tender. Remove from the barbecue and allow
to cool.
Place the dressing ingredients together and mix thoroughly. Add salt and pepper if required.
Add everything, except the sesame seeds and the dressing, into a large bowl, add the dressing and toss around.
Add the sesame seeds by sprinkling over the top and then serve.
