Dried Bean Stew Recipe

How to make a stew from beef and dried white beans:


Dried Bean Stew

List Of Ingredients


2 cups of dried white beans that have been soaked overnight
500g of stewing beef cut into cubes
2 finely chopped onions
2 tomatoes that have been peeled and chopped
3 crushed garlic cloves
A quarter of a cup of ghee or butter, margarine or vegetable oil
4 tablespoons of tomato paste
salt, black pepper and mixed spice to taste
water

After pre soaking the beans drain the water and place them into a large saucepan. Add fresh water and bring to the boil. Once boiled allow to simmer to tenderise the beans. Drain the water.

In a large frying pan add some oil and heat. Add the onions until they are brown. Add the garlic, ghee or butter, margarine or vegetable oil and then the meat.

Add the tomatoes and the tomato paste. Season according to taste and add the mixed spice.

Simmer for a few more minutes.

Stir in the beans and then add enough water to cover the mixture.

Bring to the boil, cover and then simmer until the meat is tender. Alternatively you can put the mixture into a casserole dish for about 2 and a half hours at gas mark 4 or 180C.

Serve the bean stew with rice.
