How To Make Lancashire Puddings
Preheat the oven to 180C, 350F or gas mark 4
Remove the crusts from the bread, gently roll the bread with a rolling pin then lightly butter.
Cut 6 of the bread slices into 2cm wide strips. Cut the remaining 2 slices into triangles.
Butter line four small dishes, such as ramekins, then line them with the bread strips.
Beat the egg, extra yolk and the milk. Season with salt and pepper if desired.
Sliced the red spring onions at an angle and fry in the remaining butter for about 30 minutes.
Remove the stalks from the spinach and add the leafs to the onions and cook until they wilt.
Remove from the heat and allow to cool.
Place a layer of the onion and spinach mixture to each dish. Then add a layer of bread followed by a layer of
grated cheese. Add another layer of spinach and onion mixture. Top the dishes with the bread triangles and finish
with a layer of the grated creamy Lancashire cheese.
Pour over the egg mix. Set aside for about 15 minutes so that the egg mixture soaks into the bread.
Place the dishes in a warm water container so that the dishes are covered with water, but do not reach the food.
